Everything is good as before at the "Balthasar" - the classic fine-dining restaurant in the style of the nineties with white-covered tables along the large rotunda of the dining room offers a constant kitchen performance by Elmar Simon. Laura Simon manages the friendly, young and professional service and advises on suitable wine pairings competently and stylishly to match her husband's cuisine. The undisputed number one in Paderborn does not need or look for experiments or surprises - the guests thank them and certainly appreciate the extremely large portions compared to other addresses of this level. A large porthole offers insights into Elmar Simon's realm - and from it still come classic-modern dishes such as the creamy saffron soup with North Sea crabs and bouchot mussels or the consistently good cod fillet. The vegetarian menu with a wonderfully poached Paderborn country egg with Périgord truffles on spinach leaves or melted (Simon himself would not rightly say "sloppy") ravioli is remarkable.
