Wolfgang Becker cooks a high-end kitchen without frills in Trier-Olewig. This fits in with his design hotel in the cool, light-flooded cube as a new building next to his parents' inn - and with his clearly structured wines, because the man also looks after 20,000 vines on the side. With so many great talents, Becker might have to decide at some point whether he has a very clear preference to catch up with the absolute top in one of the three areas, and would then have to subordinate the rest to that. We don't know whether he intends to do that, and until that happens, we will enjoy a relaxed, yet precise cuisine made from the best ingredients, which is worthy of all honour and will be upgraded by us again this year with red toques. Why? Because Wolfgang Becker runs authentic Weinhaus cuisine (next door) on the one hand, and on the other hand is not afraid of unusual aromas on his large stage in the new building. Christine Becker presents four to six courses, from the beef tartare "Rossini" with foie gras cream and spinach sprouts to Breton red mullet with a small, intense seafood stew to the perfectly deep red roasted breast of the Miéral pigeon in a shiny, dark autumn truffle jus, plus a praline from the leg. The portions are quite extensive for a large menu, the plates aesthetically crafted and the wine accompaniment suitable. Respect – and anticipation of the next visit.
