Some recipes still come from his grandmother Berta, who was able to emigrate in 1936 and escaped the Shoah. The internationally successful Israeli star chef Assaf Granit has dedicated his lively Berlin restaurant with modern Levant cuisine to her, in which he combines many varieties of Jewish culinary tradition with innovative dishes. Even the elongated Frenavon bread, served in advance with tahini, crushed tomatoes and sea salt, has addictive potential. In the velvety Baba Ganoush, the aubergine cream is flambéed. He serves the grilled Persian sea bass with chraime sauce, which is fiery with green chili. Pause is the name of the dessert, which combines chocolate mousse with cardamom crumbles, olive oil and salt in the most delicious way.
