Gault&Millau's review 2025

The Bricole combines modern design and a stylish brasserie atmosphere. Fabian Fischer provides a personal touch as host, while Steven Zeidler inspires with French-modern cuisine. This is where the neighbourhood meets for an evening menu, accompanied by a careful wine accompaniment by the sommelière Bourg or refreshing non-alcoholic options. The menu offered a balanced selection of courses: the amuse-bouches such as snow crab or a radish with tofu and grape convinced with a harmonious combination. The Wagyu with Borettane onion and mushroom consommé was very successful, whose tender flesh harmonized perfectly with the sweet onions. The artisanal bravura piece, however, was the butter-tender Nebraska beef with black salsify in spice breading and kale, accompanied by a powerful, creamy, dark jus. The sesame flan with cranberries formed a successful, sweet and sour conclusion. The service is professional and pleasant.
