A wise decision: Carmelo Greco appointed his long-time sous chef Benedetto Russo as equal chef last year – the dual leadership now acts in a well-coordinated manner at a much higher level. The creations have gained in finesse without missing the familiar wealth of aromas. Even the small attunements are much more differentiated, be it the small pizzetta as the mini essence of a pizza or the mozzarelina, both pure Italy compressed. The interpretation of the Sicilian sandwich "Pane Cunzato" with tomato foam, bread ice cream, anchovies and herbs is also terrific. As a classic, the Parmigiana royale greets you as always à point with orange-coffee jus, the Acquarello risotto with formidable scallops is surprisingly palatable or in the main course a veal fillet "tenere" wafer-thinly breaded, but thickly sliced as a fillet, in the style of a Cotoletta Milanese, juicy and bursting with power surrounded by a wonderfully intense jus and some à point roasted vegetables. As a special highlight, a well-cooked langoustino shines in combination with veal tongue, Joselito ham and a wonderfully light herb sugo, which naturally bridges the gap between sea and land – bravo! The patisserie is also more delicate – the composition of different raspberry textures crowned a formidable evening! This is how Italy is fun – forza, carmelo e Benedetto!
