Gault&Millau's review 2025

Markus Philippi is now responsible for "Casala – the restaurant" and thus for six dining rooms and a summer terrace in the Hotel Residenz am See, which used to house separate concepts. However, this does not detract from the quality of his cuisine, the merger has not been accompanied by a downgrading as elsewhere. The larger space available (the large black-and-white patterned armchairs have remained) also creates space for a relatively elaborate concept, in which guests can put together a three- to six-course menu from a total of twenty dishes. This also includes our only minus point: Finding a dramaturgy or creating a common thread through the menu is thus left to the guest – in the "old" Casala, that was Philippi's business himself, and we didn't fare badly with that. On the other hand, it's nice that the menu notes that "of course only one course" can be eaten and that the seasonality of the offer plays a greater role than before. In addition, a special offer for guests under thirty and an inexpensive lunch menu reduce the fear of the threshold. Nothing has changed in the French-Mediterranean orientation of Philippi's cuisine, with mostly clear references to the Lake Constance region, from grass-fed beef tartare to arctic char and game. But scallops and red mullet also swim on the plates in sauces that are classically and well-crafted across the board, even if not from the Swabian Sea, which is on the doorstep but remains visually shielded from the terrace by a row of garages. This, in turn, does not have to be a disadvantage, because it brings enjoyable peace and quiet, which is rather the exception in the tourist hotspot Meersburg - as is ambitious cuisine.
