Within sight of the local maypole between Kranzberg and Karwendel is the market restaurant. In the midst of this Upper Bavarian Lüftelmalerei splendour, Andreas and Nancy Hillejan, actually from the Lower Rhine, do amazing things. They serve an elaborate fine-dining menu, but also Wiener Schnitzel and upscale tavern cuisine à la carte for hungry hikers. And on Friday and Saturday even at lunchtime. Certainly a tight program, but the plates are bursting with ideas that are sometimes more, sometimes less influenced by the Alpine region. The inspiration for the artful tomato salad at the front comes from the south: with fresh and dried tomatoes, tomato jam, salted lemon gel, a nice salty burrata ice cream and a vinaigrette with tomato water, the starter is a sun-drenched noble caprese with a stable umami foundation. The following trout swam in the nearby, cold Kranzbach water, on the plate it is combined in contrast with a citrusy-fresh fennel salad and a fruity paprika cream on the one hand and a robust goulash broth and a massive smoked fish brandade on the other. In the wonderfully tender, pink roasted veal fillet with fried egg, beech mushrooms and fava beans, the onion cream, the leek oil and the teriyaki broth played very offensively with sweet tones. In the concluding, full-bodied exhibition of hazelnuts and plums with ice cream, curd, pickled fruits... the plum dumpling with hazelnut coating is the heart component. With her wine list, Nancy Hillejan courageously relies on outsiders from Southeastern Europe, especially in the accompaniment. Otherwise, Austria and South Tyrol are big topics for her. So feel free to bring a thirst for discovery.
