Stefanie Hummel's realm, the gourmet parlour in the traditional Hummel inn in the Upper Palatinate, comprises twelve seats. And in it, everything is a little different than elsewhere, also different from the neighboring Old Hall, where people happily "enjoy straight ahead", as the website promises; The signature dish there is the braised roast ox. The fact that it comes from the same kitchen as the five-course menu in the gourmet parlour may be recognizable by the good taste, but the plates look completely different - here the Hummels try new ways, and quite innovatively, but on classic ground. Stefan Hummel and Michael Brettner present mainly regional dishes in the elegantly simply furnished parlour with linen runners on bare wooden tables, but do not shy away from Mediterranean influences such as ingredients. Her finely balanced and elaborately designed plate artworks like to convince with sour-sweet contrasts such as kimchi with black salsify or pork belly with quince and date, but in between also quite classic as with the duck breast à l'orange with Brussels sprouts. Sounds banal at first, but comes to the table in terms of cuisine much more refined, aromatically finely balanced and varied in many ways. The wine list with a focus on Lake Constance offers a small, fine selection at fair prices.
