Gault&Millau's review 2025

Even on Monday evenings, every table is reserved here, and not without reason, because the combination of well-stocked wine bar and regional-international cuisine appeals to Freiburg residents as well as tourists. In the glass and on the plate, the Breisgau unites with the world, Baden joie de vivre with creative curiosity. Chef Mario Fuchs, however, trusts above all the inherent taste of the seasonal products from the surrounding area. The trio of Jerusalem artichoke with shiitake and lamb's lettuce as well as tartare and smoked char promise high quality. A wonderful interpretation of the classic Italian "spaghetti bolognese" comes as a ragout from Wagyu, arranged on homemade saffron pasta with Belper tuber and Ibérico pancetta.
