Gault&Millau's review 2025

For 110 years, the Lege family has been running the bright and friendly inn of the same name. Claudia Schulze, the great-granddaughter of the founder, has been running the service for 30 years, and her husband Hinrich is responsible for the classic, down-to-earth cuisine based on French cuisine with clear regional influences and equally regional-seasonal ingredients. Inside, you can dine at white-covered tables by the tiled stove in a chic and cosy ambience, outside a few brick houses, paddocks and nothing else: this is Thönse, two stone's throws from Hanover. And if it weren't for the legendary ride-on lawnmower race, Thönse would probably be nothing more than Burgwedel. With the two three- to seven-course menus (one of them vegetarian) from Hinrich Schulze's kitchen, the trip to the countryside is also worthwhile for city dwellers more than once a year. Appealing and harmoniously upscale feel-good cuisine is offered throughout - an intensely aromatic mushroom essence, juicy-spicy pheasant with black pudding (albeit with a compositionally somewhat surprising potato salad), saddle of venison with black salsify or a wonderful goose menu from liver to leg in four courses in November. Amusing is the small conversion attempt for vegetarians, who are offered a veal boiled beef as an additional option for the kale-Jerusalem artichoke main course, but who also get their money's worth in terms of taste without a carnivorous fall from grace. Good wine list at pleasant prices.
