Gault&Millau's review 2025

Nothing new is not always good news – but it is here. Thomas Zimmermann has always cooked classic cuisine in the historic inn (family-owned since 1748!) in the middle of Schramberg, as he once learned it from Harald Wohlfahrt and Franz Keller – sovereign craftsmanship, without skis, conservative in the best sense of the word. Margarete Weber's service is also perfect. The décor of the restaurant on the first floor is also perfect: oriental carpets on creaking wooden floors, panelled walls, round tables covered in white with artfully folded napkins, bouquets of flowers. The kitchen doesn't experiment either, but serves Baden-French classics such as an intense, clear oxtail broth or aromatic, baked goat's cheese with wild herb salad and honey in advance. A must is the Provençal fish soup with shrimp and loup de mer, fine vegetable cubes and saffron threads, the sauce rouille comme il faut, of course. Unfortunately, the classic menu is only served for two or more people, so the solo tester was left with a wonderfully tender beef roulade with glazed red cabbage and gently spicy mashed potatoes, which was nevertheless more than satisfying. The wine list clearly lists mainly Baden and French bottles and is hospitably calculated.
