Rolf Straubinger and Markus Waibel make it a little easier for themselves and the guests at the beginning: If you come between 6 p.m. and 7:15 p.m., you can enjoy the spectacular view of the Filstal, deep below Staufeneck Castle, and an aperitif or two. Meals are eaten together punctually from 7:30 p.m., and if you arrive late, the kitchen will consistently punish you with one or two courses deduction from the six-course menu, which is available as a classic or vegetarian menu. It is advisable to arrive on time anyway, because the brilliant wine list could severely impair the conversation at the table for vinophile guests for the first hour. Either way, the wine recommendation of sommelier Markus Canestrini is to be trusted: the man knows what he is doing and complements the fine cuisine unerringly. Karin Schurr and her cordial service team act just as confidently, bringing the excellent sauces – the heart of the castle kitchen – to the table right in the pot for refilling, which most guests like to use. Not because they are saved on in the first service, but simply because they are so incredibly good and give the high-quality ingredients selected across the board the creamy, shiny frame that makes a good meal a special meal. During our summer visit, the puristically cooked, leafy, juicy turbot with highly aromatic morels in vin-jaune sauce was particularly convincing – this is classic cuisine at the top level, and the brilliant selection of petits fours is worth a visit almost alone. Delicately dosed modern, well-crafted haute cuisine, friendly, professional performance: fine dining at its best, appealing to a wide audience.
