In the middle of the old town of Schorndorf you will find Nico Burkhardt's gourmet restaurant of the boutique hotel Pfauen with innovative and courageous cuisine. The amuse-bouche is served in bowls and glasses from the 70s - a wink in the direction of retro chic. But what follows is not an old-fashioned menu, but a courageous, contemporary, independent culinary achievement. He dares to do something - and you can feel it with every bite. The marinated foie gras is a poem. The sole with lettuce, bathing in a foam of a lime hollandaise (the side dishes are served on a stick with a hat made of peas - fairytale and humorous). The dishes are reminiscent of fantasy worlds that melt in your mouth. Fine, purist olive oil from Crete is served with it, lovingly selected by his wife with Greek roots - and it fits harmoniously into the concept. In addition, there are seven different types of bread according to family recipes with excellent butter variations. But as good as these breads taste (you want to eat them ALL) – it's almost too much of a good thing to start a menu, and if you grab it courageously, you'll pay for it later. The menu remains refreshing and exciting, whether it's burrata pearls on elderberry granité or a creative interpretation of the Mett hedgehog Reloaded. The piece of Iberico pork is buttery soft and melts in your mouth. The dishes are characterized by absolutely precise craftsmanship, paired with creative, light and almost lyrical presentation on the plates. You wait eagerly for the next course and are happy like a little child about the loving performance. Finally, the dessert: a hazelnut sponge – soft, intense and in perfect harmony with the slightly sour taste of the roasted and finely crushed cocoa beans. Nevertheless, one wish remains: Just as the dishes on the plate are aesthetic and imaginative, the ambience for the maximum of eight guests could do with a little more charm.
