Sarah Hallmann has promoted her sous chef Rosa Beutelspacher: Together they now design their purist, regional-seasonal creations, which they serve with an all-female team in the equally purist restaurant with whitewashed brick walls on Böhmischer Platz. Reduced chic characterises the ambience, clarity and intelligence characterise the cuisine, the sensitively balanced dishes come to the guest on fine porcelain. A vegetarian and a classic menu are available. If you don't make a reservation and are lucky enough to find a seat at the counter, you can also choose individual dishes from a small menu. However, this is not a real option for hungry eaters, because purism also refers to the portion sizes. However, the little things offer precise cuisine with selected good ingredients and are a real – and completely independent – pleasure, which cannot be emphasized enough in a city where copying trends is also part of good manners in better restaurants. During our summer visit, we liked the small fried langos with crème fraîche at the start as well as the fine-fat Frisian Wagyu carpaccio with sunflower seed cream and Jerusalem artichoke crunch in a completely different way. The pigeon breast with peppery-hot truffle jus is also great – and nothing else that could distract from the intense poultry taste. Very individual and suitable wine selection beyond the big names of Patricia Lee, and all this at a very fair price.
