Hegel 1, hidden in the Ethnological Museum in Stuttgart's city centre, is a place that combines modern, purist cuisine at the highest level with a relaxed atmosphere. Under the direction of Jan Tomasic, the restaurant inspires with a clear concept: reduction to the essentials, paired with a clear, harmonious aroma. Here, they deliberately play with squeaky clean, high-quality ingredients that are prepared to the point. There are tacos with salmon and an impressively intense mackerel with citrus and apple notes, which is shiny fresh - as if fished directly from the sea - on the plate. The taste is clearly in the foreground, without unnecessary frills or overload. Each plate is well thought out and appears almost minimalist, but always sensorially and texturally sophisticated. For example, the quail with warm fennel salad, orange jelly, capers, olives and salty spice, which convinces with a complex but harmonious taste. This shows how fennel, which often polarizes, can be used creatively and surprisingly. In between, the deconstructed Berliner Weisse (today made of a sorbet of sorrel with an espuma made of beer) is served – an almost obligatory part of every menu, the signature dish of the house, so to speak. For a sweet finish, a baba au bourbon with caramelized popcorn corn 'at its best' and a dreamlike vanilla ice cream. The wines are perfectly matched to the flavors of the dishes and underline the dishes in their diversity. The service is unobtrusive, cordial and always attentive. The interaction with the guests is grounded and relaxed, recommendations for the wine selection are competent. The wine sequence is simply poured into the existing glass, an almost familiar, pleasant atmosphere that makes the evening an absolute feel-good evening. All around. And thus a must for all gourmets - not only from Stuttgart.
