Gault&Millau's review 2025

The Sommerau is a place like few others. And it's best to talk about it quietly, because hype is not the Hegars' thing. Instead, almost untouched nature in the Steina Valley near Bonndorf in the Black Forest. The inn, which was rebuilt in 1988 after a fire according to the historical model, is a haven of the original - and that's just the way it is here, without any fanfare. Five kilometers drive on a single-track road, no cell phone reception, no TV, no Wi-Fi. Only nature. And nature-loving cuisine. Game from their own hunt, fish from the trout pond, herbs from their own garden. There are three menus, a classic Baden, a vegetarian and the Sommerau menu - and the kitchen lets the aromas play discreetly and harmoniously around reduced, but all the more high-quality ingredients. Like the confit Black Forest salmon trout, which is perfectly matched with pearl barley, smoked fish sauce and melted calf's head, or the tender leg of venison in the unobtrusive truffle jus with almost raw pointed cabbage and quince relish, which tends to support its own taste, plus a good selection of mainly Baden wines. How nice that nothing distracts from the enjoyment!
