Gault&Millau's review 2025

A pottery. A flower shop. A backyard. An inconspicuous low-rise building with bare, long wooden tables and bar stools. An open kitchen. Cool people. And a five- to seven-course menu that combines natural Lower Saxony cuisine with Japan and Scandinavia in a floral aesthetic. On homemade pottery, the silver cutlery is a gift from enthusiastic regulars. The shop is – excuse me – not Osnabrück at all, we would rather find it on a Copenhagen quay or in a Neukölln side street. Casual, relaxed and yet with great seriousness, the brigade creates a brilliant menu here, which they also serve themselves. Top the sourdough bread with algae and smoked salted butter. The char with quince and rutabaga puree is gently slaughtered, if you like it with caviar. The "walk through the garden" is refreshingly diverse, the octopus with fennel and rouille sauce is intense, the grilled (not baked) sweetbreads in an onion mezcal broth with poverades are distinctively citrusy. Everything to the point, unusual and unusually good. Haute cuisine cool and grounded: Go there!
