Gault&Millau's review 2025

In the two wood-panelled halls and spacious terrace of the luxury resort Dollenberg, somewhat euphemistically called "Kaminstube" and "Bauernstube", head chef Martin Herrmann, who is in charge of the top restaurant "Le Pavillon" in personal union, serves cosmopolitan interpreted Baden cuisine (a New York cheesecake does not disturb the local colour any more than the fillet of Loup de Mer with crustacean sauce and homemade tagliatelle). To call the Kaminstube a second restaurant would be almost malicious, because it is undoubtedly the centre of the holiday hotel and is accordingly frequented by hotel guests as part of the booked guesthouse as their preferred address, but guests without an overnight ticket are also welcome. And they don't have to feel treated second-class, because the selection of menu options from Mediterranean to Baden-classic is large, the offer is of rock-solid quality - and the wine list is the same as in "Le Pavillon", which really leaves nothing to be desired in terms of fluid intake.
