Gault&Millau's review 2025

Everything back to the old new, one would like to state - in the unique interior, which is what makes up the Adler spirit, a young, sympathetic and curious service team is now at work, and chef Michael Vogel continues to write the kitchen history with small, almost unnoticed accents, which on the one hand make the dishes lighter, but at one point or another (still) lack the small strokes of genius of Josef Bauer. We started with a great venison Maultäschle with small ones, feasted on Bauer's tripe with eel and onion, which were simply as wonderfully sloppy as ever, but more differentiated in the fine-tuning due to a little more acid accents. In the surprise menu, we encountered pork belly with lentils and onions, filled with a potato cream - the best craftsmanship, palatability, but also a skilful fine-tuning, which Michael Vogel's Caminada school impressively demonstrates. Wagyu in the main course with the ingenious potato pavé classic - a real treat! The desserts are also worth mentioning, always one of the house's strengths, be it the intense quark flan with rhubarb and yoghurt ice cream or the perfect soufflés. Wonderful - the tradition can continue like this.
