"Interesting" is one of those words that is often used in a culinary context, for example when a polite guest wants to indicate that he did not like what was on offer. But you can also interpret the vocabulary in a completely different way: in the sense of "not eaten like this before", "innovative" and "memorable", "stimulating further occupation". In the context of these paraphrases, Sebastian Sandor's cuisine is truly highly interesting. We don't want to offend Saarlouis in its perceived urbanity, but the fact that an independent kitchen style is developed, which is also the occasion for discussions among experts and pilgrimages of colleagues in more distant regions of the country, rarely happens in sleepy small towns on the outskirts of the republic. If Sandor cooked in Berlin or Hamburg, he would certainly be the hype. But somehow his cuisine also belongs a bit closer to France. And on the other hand, he decided further east, to the Far East, to be precise. We often experience that classic cuisine is spiced up in an Asian way. That it is originally conceived and laid out in Japanese flavors is rarer. And that it comes across as independent as in the menu of the Louis - just only in Saarlouis. The high former courtroom with white-covered tables offers an appropriately large stage for an emancipated haute cuisine, which presents a theater of aromas and textures with quiet dramaturgy and surprising twists in a dozen acts - such as the Japanese egg custard in the broth of pork with kujo negi (a sweet Japanese leek oil) under imperial caviar and ham. We have never eaten chawanmushi like this before: light yet spicy, sweet yet salty, harmonious and yet ... we repeat ourselves ... interesting. And so it goes on. Have we aroused your interest? You won't regret it. And if (which we don't really doubt) the very, very few rather classic menu components (we already knew lobster with citrus aromas) develop even further, we will already pull out the fourth toque for the next season.
