The Main Tower Restaurant on the 53rd floor above the rooftops of Frankfurt combines breathtaking views with modern, Asian-inspired haute cuisine. Under the direction of chef Martin Weghofer, menus with five to seven courses are created, which impress with profound aromas. Particularly noteworthy are the kohlrabi baked in salt dough on hamachi tartare with caviar and the fjord salmon confit in nut butter, accompanied by dashi, edamame and kaffir lime foam. Weghofer's dishes captivate with clear, reduced compositions with subtle Asian influences and ingredients such as yuzu, miso or finger limes. His talent for harmoniously combining complex aromas is evident, for example, in the crépinette of quail on pearl barley risotto. The desserts, such as a pistachio chocolate tart with rhubarb and raspberry sorbet, also impress with a balanced play of freshness, acidity and sweetness.
