Gault&Millau's review 2025

A house from the 14th century with a kitchen from the 21st: This is the Margaux in the middle of Limburg's old town and, along with the cathedral, now the second serious reason to make a stop in the ICE high-speed route no-man's-land between Frankfurt and Siegburg/Bonn (by the way, also for lunch – very cheap for less than 40 euros!). The restaurant has nothing to do with Michael Hoffmann's legendary address of the same name in Berlin, which closed its doors in 2014. The freshest vegetables on fine porcelain are also available here, but Fabian Sollbach has more other things in mind in his hometown at bare wooden tables in the modernized old building and on the terrace on the Kornmarkt. He serves classic French cuisine in a modern, sometimes Asian-inspired interpretation with ingredients such as bluefin tuna, duck liver or a duet of Label Rouge salmon with Maine lobster and "Polish" cauliflower. It gets pretty international on the plate, but always remains aromatically structured and technically on the (cooking) point. Good sauces, good aromas, good desserts: A little more choice in wine, and we would always come back.
