Gault&Millau's review 2025

Of all places, in a place like Munich Airport, which could not be more international, chef Marcel Tauschek celebrates his modern regional cuisine, confident and relaxed. Many products come from the near or far surroundings and are prepared in a straightforward and focused way, the salted butter comes from Lake Tegernsee, the char from Penzing in Upper Bavaria, home-pickled and married with a profound sauce of beetroot and nut butter. The parlour chick for the main course, juicy and aromatic, does not come from Bresse, but from the Upper Palatinate, plus a hollandaise based on chicken fat, which was effectively applied to the plate from a siphon. Fortunately, the napkin is as big as the non-existent tablecloth would be. Tauschek experiments a bit with the side dishes, it is fermented and pickled, which provides attractive taste contrasts. The dessert is ambitiously vegetable: sorrel sorbet, marinated lamb's lettuce, dill and mascarpone cream. More of a summery intermediate course than a sweet bouncer that could definitely do with some improvement. Attentive service, fine, not very original wine list. Brand new is a terrace, from which you can sometimes catch a glimpse of an airplane roaring into the air above blooming lavender bushes.
