Gault&Millau's review 2025

Large glass fronts, wooden benches and grey tables with colourful flowers characterise the NaNum, where ceramics can be found on shelves and windowsills. A staircase leads to Jinok Kim's workshop and gallery, whose vessels are visible as below. As soon as you enter, you look into the open kitchen, where Jinok Kim researches the traces of old, almost forgotten preparation methods and prepares her modern interpretation of Korean cuisine. During the week, there is a small menu, vegan or with meat. On weekends, the fish menu shines, with finned animals, mussels, shrimps and roe prepared in creative variations - the highlight is fermented and dry-aged fish parts and seaweed. Sustainability is a top priority: vegetables from their own garden, over 50 homemade fermentations, rare homemade kimchi variations, their own tofu and self-pressed oils. There is a selection of natural wines or a non-alcoholic accompaniment.
