Gault&Millau's review 2025

The "counter restaurant" in the Harz Mountains continues to demonstrate consistent performance in its fifth anniversary year. An evening here is like a visit to the theatre, which begins punctually at 7:30 p.m. for all 18 guests at the nine-metre-long wooden counter and has many dramaturgical highlights in store. The seat in the front row with a view of the open kitchen guarantees varied entertainment: sauces are whipped, lemon peel is freshly grated, homemade oils are combined, herbs are draped on plates with tweezers. All movements seem confident, the posts are well-rehearsed. However, the patron and namesake of the restaurant, Robin Pietsch, is rarely on the road himself. Because he can now rely on the young, ambitious crew around chef Luis Hendricks. They serve a sequence of fourteen aromatic, harmonious miniature courses: cosmopolitan, but above all with influences and ingredients from all over Asia. Thai mandarin, sake, peanut and chili meet beef, scallops or Jerusalem artichokes. Steamed Chinese dumplings filled with Argentine red shrimp come in a bamboo basket, and there is foam from green Thai curry for dipping. We look forward to many wonderful umami moments, such as the hamachi with wakame and kimchi or the arrangement of pork, tortellini and yeast. Even when it comes to dessert, the cuisine alternates wonderfully between savory and sweet. And... choose the exciting wine accompaniment of the two sommeliers Max Mittag and Florian Raake with your meal. It's worth it!
