Gault&Millau's review 2025

Pierre Barrel has not taken on an easy legacy: After twenty years in which Steffen Disch (Kuro Mori) directed the Raben, he took over the historic inn high above Freiburg with a magnificent view of the country in 2024. Because no one passes by by chance, Barrel attracts old and new clientele with a weekly changing carte blanche menu in four or six courses, the backbone of which is the best (organic) products from local producers. Respect for nature is the restaurant's motto, and you can tell that Barrel's cuisine takes it very seriously. The surprise menu includes many offal, because nose-to-tail processing is part of the house's self-image, bones and carcasses go into sauce production. That's worthy of all honour – and when you offer it at an extremely low price, you can tell that Barrel not only cooks close to nature, but also very finely despite all its down-to-earthness: As a former sous chef at the Vendôme, the native Breton knows how to do it. By the way, there is also bistro cuisine with tartare, bouillabaisse and tarte tatin comme il faut. A strong start!
