The Cœur D'Artichaut has now developed into a thoroughly renowned restaurant in Münster. This is mainly thanks to the Breton chef Frédéric Morel and his wife Elisabeth, who runs the service. Morel skilfully combines traditional Breton influences with elements of his adopted home in northern Germany and refines them with a creative, modern touch. The restaurant is somewhat hidden in an inner courtyard, which delights with an attractive terrace, especially in summer. The atmosphere is engaging, almost intimate, while the open kitchen is staged like an inspiring theater stage. The monthly changing menu "Morel's Tasting" is offered in six or eight courses. A reduced four-course variant is available on Sundays. Special attention is paid to the use of seasonal and regional products. In addition to an inspiring wine accompaniment, the team also offers a high-quality non-alcoholic beverage accompaniment. The wild boar with truffle from the Périgord shows the chef's impressive ability to combine earthy, robust flavours in a subtle way. Here it is served with a velvety salsify emulsion that brings a delightful creaminess into play, while the mushrooms provide depth and texture. The leek becomes a real delicacy here. Slowly fried in tender nut butter, it takes on a delicious note. The horseradish sauce served with it is a true revelation – spicy, slightly spicy and incredibly intense. The dish is complemented by crispy fried bacon, which adds a salty note. And then the sweet potato, surprising in the sponge cake: this dessert is a true taste journey. It delights with tangy passion fruit, white chocolate and tamarillo. Exciting salt notes not only provide a fruity explosion on the tongue, but also a harmonious play of flavours.
