The name of the restaurant in the historic house with large arched windows and lots of dark wood may refer to traditional German cuisine, but it is only borrowed from the vantage point on the hill behind the restaurant in the Freiburg district of Herdern. Federico Campolattano cooks contemporary, innovative Italian haute cuisine here, his wife Valentina Tito is in charge of the competent service in one of the best ristoranti in the republic. No pizza – and if pasta, then at most in the form of spaghetti alla chitarra, of course homemade and refined with aromatic alpine butter and Ossietra caviar. Otherwise, a quintessence of what Campolattano interprets independently from the traditions of the many regions of Italy on the one hand and the ingredients from southern Baden and the Black Forest on the other hand is served in high-precision, rather purist plates, without losing the authenticity of a clearly located Italian cuisine. His own origins from southern Italy shine through, but just as confidently he interprets classics from other regions, some of which he himself has worked in. In five to nine courses at a self-confident price, he then tells the Neapolitan story of octopus – both in the form of place cards and on the plate itself. Nothing is random here, especially not the exact portioning of the ingredients and sensitive dosage of the spices. If you cook in such a reduced way, you can't conceal any mistakes. And that's why Campolattano simply doesn't do any, but works with great attention to detail to achieve the best possible result. And you can taste it. Buonissimo!
