"Let's toast Bobby Bräuer's well-being and the very good years to come with our hat off," ended our appreciation for the still youthful-looking chef, who really doesn't look like he has already cracked 60. In this respect, there were no signs and we really didn't want to suspect that - and unfortunately it is now certain - Bobby Bräuer packed his chef's hat in the EssZimmer at the end of 2024. This beautiful restaurant in Munich's BMW Welt building was considered one of the best and certainly the most consistent culinary address in the city for many years. The EssZimmer, which will be completely rebuilt in the first half of 2025, extends over several levels and offers a spectacular view of the Munich skyline, which will further enhance the certainly unique atmosphere, especially at dinner. Guests can watch the lively city from the panoramic windows while continuing to enjoy culinary delights at a high level. The successor for Bobby Bräuer had not yet been decided at the time of going to press. Bobby Bräuer himself now wants to shift down a gear or two and enjoy the world with his wife, he will certainly not forget how to cook and it will be just as certain that we will discover him behind a stove again on one occasion or another. Bräuer's culinary signature is particularly characterized by a unique combination of classic haute cuisine with modern, international influences, with regional ingredients also playing an important role. Bräuer is known for his meticulous way of working and his extraordinary demand for perfection. Every dish that leaves his kitchen is well thought out down to the smallest detail and precisely coordinated. He attaches great importance to the interplay of aromas, textures and colors. A menu in the EssZimmer was always more than just a meal - it was a culinary journey that spoiled the guest with new, surprising taste experiences on every plate. Particularly impressive is Bräuer's ability to transform classic elements of French cuisine into modern, creative dishes without losing touch with tradition. His focus on high-quality ingredients that are prepared to perfection and his attention to detail make his cuisine so exceptional. Bobby Bräuer is a chef who is characterized by authenticity and passion. Born in Munich in 1961, he discovered his love for cooking at an early age and, of course, ended up in the "Aubergine" with Eckart Witzigmann. He worked in some of the best kitchens in Europe, including France, before returning to his hometown of Munich. What sets Bräuer apart is his humility towards his craft and his passion for working with the best ingredients. His cuisine is inspired by nature: fresh, seasonal products are the focus, and he prefers regional ingredients that he combines with international flavors. His dishes are characterized by clarity and elegance – not an unnecessary accessory, but a perfect harmony of taste, consistency and aesthetics.
