The Sauerland is not exactly blessed with high-class restaurants. But there is the newly designed Hofstube in the luxury and wellness hotel Deimann, which in its spaciousness radiates more the character of a castle than a courtyard. From this point of view, you don't dine in the courtyard, but rather at court, the cuisine would have deserved a noble title in any case, as well as the 450-item wine list and the unusual possibility of being able to choose three different wine accompaniments from the hand of sommelier Jochen Deimann to the only menu offered (vegetarian also available on advance order). The Hofstube has been completely redesigned in the style of classic modernism and, in addition to dignified furniture, offers a view of Felix Weber's open kitchen, which is French-inspired and not purist, but all the more creative on the basis of fine ingredients. The salmon previously swam in Loch Duart, at Weber it presents itself in soy-lime marinade with Myoga buds (Japanese ginger) and N25 caviar Kaluga at the same time very product-oriented and yet unusually coordinated in a positive sense, meandering between its own taste, saltiness of the caviar and gentle spiciness of ginger. The Norwegian king crab harmonizes perfectly with the citrus aromas of Buddha's hand and the sweetness of papaya in the kaffir limonene puma, the celery foam and an intense vanilla jus go surprisingly well with slices of the Miéral pigeon. Elaborate original desserts conclude the creative round.
