In many respects, the Villa Merton is just as one would imagine a meeting place for Frankfurt's moneyed aristocracy. Representative, elegantly furnished rooms in the factory owner's villa from 1927 in the diplomatic quarter, dignified atmosphere – people dine, represent and do business. There are even guests here who wear ties. The kitchen plays pleasant accompanying music, classical, French, harmonious combinations of aromas – nothing that could disturb or distract from the course of the conversation, at the same time the high level of the cuisine is ideally suited as an expression of appreciation for the invited part at the table. Proven foodies might be a little bored, because the usual haute cuisine classics such as carabinero, ikarimi salmon or fried foie gras are served, aesthetically staged with a drop of gel here, a hip there and a tartlet underneath. But all this with good product quality, precise preparation and, where they fit, also very good sauces. There's no question about it: the kitchen under Philippe Giar knows what it's doing – and the expectability of the kitchen performance also stands for a reliability that is not always offered elsewhere. Directly in the restaurant kitchen, there is still the possibility to book the Chef's Table and then assign the main role to the gastronomic events. Very good wine list.
