It's tight when you drive to the Sackmanns: in the bend, just behind the 30 km/h speed camera, a small parking lot, and directly behind it the rushing Murg. On the other hand, it's completely different when you enter the Hotel Sackmann: the completely renovated and expanded house exudes an almost urban generosity, and the Sackmann family has been generous hosts at the Schlossberg restaurant for decades. Father and son share control of the kitchen, which serves both the guesthouse guests and the gourmet restaurant, where it provides two menus (one vegetarian) with five to eight courses. If you arrive early, don't worry: the family's cookbook collection can be found in an attractive lounge, where you can also enjoy one or two nice aperitifs while leafing through the pages. Unfortunately, the extensive renovation did not focus on an open kitchen – because what Jörg and Nico create there would certainly have been worth a curious and/or appreciative look during preparation. So you sit in beige armchairs with only indirect windows to the outside and enjoy a predominantly classically oriented cuisine, which always has to do justice to the balancing act between the most demanding Baiersbronn gourmet tourists and the hotel's quite aging regular clientele, but does so with flying colors. The Asian influences in particular are extremely good for the very good ingredients from the region, all in all, dishes such as softshell crab in sake tempura in curry dashi broth and Thai mango on the one hand and saddle of venison from local hunting in fig-macadamia crust in deep pepper jus on the other hand result in a multi-layered, always very harmonious and aroma-sure taste.
