One of the many things you can marvel at in the "Shiori" is how the sole chef and operator of the small smart counter restaurant on the mezzanine floor almost imperceptibly serves new, beautiful and finely crafted bowls and bowls. Shiori Arai's omakase menu, which is influenced by the Japanese tea ceremony, includes about 15 elegant miniatures. And of course, the course of the seasons plays a major role there, which the Japanese also devotedly celebrate when eating. It starts with a pumpkin mochi with truffle and horseradish, followed by a lobster tartare with Osietra caviar and freshly shaved wasabi, a salmon marinated with koji grilled over Binchotan charcoal with fruity-spicy yuzu kosho, sashimi with abalone, a Wagyu rump steak in an oniony sukiyaki stock, a tempura of halibut in a shiso leaf with ume sauce and, and, and... The menu ends, according to the kaiseki tradition, with tea. Here, however, in the form of an extra-creamy matcha ice cream. There is also an exciting sake accompaniment, ranging from dry, mineral variants to opulent vintage wines matured in barrique barrels. Something for those thirsty for discovery.
