Today, Schloss Hohenheim is a university that certainly has the most beautiful campus far and wide. Where young people study agricultural sciences and scientifically accompany new cultivation techniques for old vegetables, the Kavaliersbau, which used to serve as a summer residence for Duke Carl Eugen, stands opposite the main building. It is worthwhile to reserve early for the fine hall - especially if you can dine on the magnificent terrace in summer. You can still hardly eat better in Stuttgart, not in a more noble atmosphere anyway. Stefan Gschwendtner has dedicated himself to a level of gourmet cuisine appropriate to the name of the castle, which thrives on excellent ingredients (not least quite opulent use of caviar) and especially on a very product-oriented, technically perfect cuisine. This has not changed under the new owner, Wasenwirt Michael Wilhelmer - the multi-restaurateur was apparently well advised to let Gschwendtner continue to do as he wants. Every single plate is aesthetically a pleasure, but it becomes even more so when the partly aromatically divergent ingredients merge into a harmonious taste that seems quite natural, but reveals in fine secondary chords that the work here is highly complex. Immediately comprehensible with the Irish Mor oyster with cucumber-apple relish and caviar, even more complex with the tranche Alb saddle of lamb under green sauce, which harmonized excellently with aubergine mousse and anchovy aromas, or the firm carabinero with Thai basil on a bright red paprika bisque, which was absolutely subordinate to the delicate crustacean taste despite the strong aroma. The pâtisserie maintains the level of warm cuisine, the wine list lists all the best things from Württemberg and beyond.
