Between flowering meadows and rustic forests lies the traditional Spielweghaus, a place that has combined Black Forest charm with modern cuisine since 1705. Here, they cook with passion: game from local hunting, cheese from their own production, fresh herbs and a bread oven that keeps tradition alive. Just like the tradition of generational change - no easy task to preserve the charm of the traditional and still create space for new impulses. The Fuchs family has succeeded in doing this outstandingly well - Kristin Fuchs carefully arranges the management of the house with her mother, Viktoria Fuchs inherits her father Karl-Josef after years of apprenticeship and travel with Douce Steiner and in Thailand now with a serene sovereignty in her modernized country kitchen as if it had always been there. And it is. The menu begins with an elegant foie gras terrine, accompanied by chocolate "fleur de sel", quince jelly and brioche. The main course seduces with pink roasted saddle of venison and braised venison shoulder, served with pea and mushroom vegetables, green asparagus and potato noodles. The conclusion is a dacquoise chocolate slice with raspberry sorbet - a harmonious play of flavours. For fans of Asian accents, the "Fuchsteufelswild" menu entices with highlights such as a suckling pig and prawn wonton, Chinese cabbage, sesame seeds and sour vinaigrette. Friendly service and a wine list with a focus on bathing make the enjoyment perfect.
