It is almost impossible to pigeonhole Winzerhof Stahl. Is it a winery with upscale cuisine, a fine-dining restaurant with a winery background or a romantic event location that offers pop-up cuisine at toque level? In truth, it is all of these things – and yet more. Christian Stahl combines the symbiosis of good wine and good food like no other. As a renowned producer of exquisite Franconian wines (awarded 3 grapes by us) and at the same time chef, he shapes the culinary experience in Auernhofen. Stahl is always present, even in the service of the nine-course menu. An elegant start with the freshness of Blanc de Noir, accompanied by intense beef tea and caviar. Then a combination of tender asparagus and crayfish, which gives this course a fine balance of elegance and spice. The bittersweet chicory is also beautiful, refined with a silky beurre blanc and fresh orange notes. The tender Omble Chevalier (char), combined with fresh asparagus, peas and pistachios, perfectly rounded off with a light hollandaise, is also beautiful. The wine accompaniment impresses with the quality wines of the house.
