Gault&Millau's review 2025

They are all there: the young generation with sommelier and restaurant manager Desirée, her husband Christian Binder at the stove and, of course, with traditional honors. But also the seniors Gabriele and Hans Stefan Steinheuer (the patron at the stove of the second restaurant Poststuben and at the cigar bar, the hostess at the brilliant cheese cart, for whom a visit to Steinheuers alone is worthwhile – with local offerings, the best from Maître Antony and – since always – also from Waltmann). In general, the tradition: long aisles are filled with trophies and certificates from past decades, at the very back left in the basement a newspaper clipping about the reopening of the Poststuben in 1985. The picture proves that nothing essential has changed since then. Metal figures on the tables, butter dishes and cutlery made of heavy silver, a subdued atmosphere and – unfortunately – incredibly dim light in which Binder's dishes hardly come into their own. Which is a pity, because the chef doesn't find it boring at all to continue the great legacy – "We live tradition here," says his wife, and what would be dusty and boring elsewhere is simply good here. Very good, to be precise, in places even outstanding, yes, world-class. Precise classicism, absolute harmony, nothing disturbing, no harsh contrasts, no experiments spoil the enjoyment at Steinheuers. Foie gras, lobster, turbot, venison – the list of ingredients reads conservatively banal, but Christian Binder finds its way into the menu in a quality that is hard to find elsewhere. Perfect cooking points, textural finesse, fine optics – none of this needs any further mention at this level. So it remains for us to give extra praise to the sauces that ennoble the easily prepared products. The foie gras with sherry jelly is combined with ultra-light mousse and mushrooms, plus a melt-in-the-mouth fried piece with a cracking caramelised crust – it doesn't get any better than this. The vegetable course (instead of a vegetarian menu, the only concession to current trends with intensely sweet leeks, roasted celery, crispy algae and delicate citrus notes that run through the entire summer menu, like the finger limes with lobster with chicory and frisée). The "Flowers" and "Roots" menus each offer five courses of the best classic with a freshness kick – the patisserie only comes with a dessert, otherwise modestly delivers friandises and thus leaves room for the brilliant cheese selection mentioned at the beginning, which is probably only celebrated in a handful of German restaurants. So how nice that everything remains – and that the brilliant wine list is also getting on in years, in the very best. At prices that are hardly higher than the purchase price at the winegrowers for local products and offer the world's best so fairly calculated that an overnight stay in the adjoining small hotel is urgently recommended. If you want to drink a large selection of matured Romanée-Contis for less than €1,000, you have to go to Heppingen, even in online retail you pay several times as much. Great hospitality and great cuisine paired with generosity – heart, what more could you want?
