Gault&Millau's review 2025

Marc Rennhack has worked for Juan Amador three times in the course of his career, most recently as head chef in Bucharest. His years of apprenticeship and travel also led him to Hans Stefan Steinheuer at the Alte Post – and both masters had a noticeable influence on the chef's culinary art in the beautiful, maritime hotel on the beach promenade of Cuxhaven-Duhnen with a view of the passing large ships and the Wadden Sea. For a dozen years now, Rennhack has been offering a three- to seven-course menu on a classic French basis, but with noticeable Spanish and Oriental influences, especially in terms of aroma and spice. Whether it's French duck liver, carabinero from the Atlantic, char from Alsace or sole from the North Sea – fresh, high-quality products and highly intensive sauces and stocks that are perfectly prepared by craftsmanship are convincing on the tidy plates with a high textural variety and visible joy in playing with variations and contrasts. The wine list is in no way inferior to the quality of the cuisine.
