Hans Robert Lange Rodriguez has fulfilled his dream of self-employment with the Teko in Essen-Rüttenscheid. The Bolivian with a German father combines two culinary worlds at Teko: "Teko" means "culture" in Spanish. For the Guaraní people in South America, the term refers to a shared experience. And Lange Rodriguez now lets us participate in this experience in 25 seats in his purist restaurant. And so we find combinations on the menu such as veal cheeks with tarragon and chipotle or beef with llajua, a hot chili sauce. The pepper potthast in the form of a kind of breaded meatball in a pepper espuma is served with capers, jalapeño and wakataya (spice tagetes). At first, the plates look very much like classic gourmet cuisine, the often spicy Bolivian note likes to hide under gentle flowers and elaborate arrangements. In the vegetarian menu, the main ingredients are replaced by vegetable components, such as Duroc pork with grilled celery. Not everything has opened up to us as aromatically completely well thought-out precisely because of these interchangeable elements, but the consistent combination of regional classics with South American fiery quality always leads to one or the other previously untasted note - and we appreciate that.
