Dominik Wachter has turned the former cooking school of Thomas Mühlberger, whom he assisted for a long time, into a culinary gem with hand-made ceramics on walls and in the cupboard, in which he elegantly and easily celebrates consistent regionality in a counter concept that does not seem at all rural, which one would rather expect to find in Schwabing or Munich's Glockenbach district. But far from it: "I'm a Priener, I've always been here and never want to leave," he says, and you immediately believe him when you trace his finely tweezed creations back to the ingredients used, almost all of which come from the immediate vicinity. It's not that there aren't lemons or oysters, but they play a supporting role in the concert of Chiemsee zander in goulash broth with napkin dumplings or sheep's yoghurt with fig leaf and pumpernickel, Chiemgau beef or chicken ballotine, which Wachter lovingly arranges and serves with a convincing taste in his four- to seven-course menu. If possible, book one of the seats at the round counter to experience the concept holistically with a view of the kitchen through a large glass pane.
